Ingredients
sweet potatoes oil for frying (I use coconut oil)
sugar (I use brown)
METHOD
Wash potatoes and cut into slices (it is optional to skin them but I find leaving the skin on is healthier and it keeps them in better shape).
place in steamer and steam for about 15 minutes.
Sprinkle with sugar and continue frying.
When golden brown, turn over, and fry other side. Do not go away from stove as the sugar will quickly burn if not carefully watched.
I actually turn the potatoes quite a few times. You can regulate the heat if the pan gets too hot, but it still has to be carefully watched.
