RECIPE TIME - PUMPKIN FRITTERS

                                        PUMPKIN FRITTERS

                                                                                     2 cups cooked                  pumpkin
  3 Tbsp flour
  3 level tsps baking                                                   powder
                                            1 egg
                                             salt
                                             mixture of cinnamon and sugar to sprinkle on top of fritters when done. 





METHOD

Mash the pumpkin well and mix in 2 tablespoons of the  flour and the salt , then add the egg and again mix well.


 If the mixture is too thin add the rest of the flour.  If you do not use the last tablespoon of flour then only use 2 teaspoons of baking powder.  It should be about the thickness of yoghurt.


  Lastly add the baking powder and drop by spoonfuls into a frying pan greased with oil (I use coconut oil) .  Do not let the pan get too hot as the fritters will burn. As soon as the tiny bubbles appear on the fritters they are ready to be turned.




Sprinkle with cinnamon and sugar mixture . Makes plus minus 12 fritters.
